Introduction
Welcome to Culinary Safety and Sanitation. This letter will give you the basic information about the course as well as resources for ensuring your success in online education. Please read it carefully.
Let me start by telling you a little about myself. I have a BA in Finance from San Diego State University. For 29 years I was an Owner Operator and Director of Operations of 7 McDonald’s restaurants. I also co-founded All Corked Up, an innovative 10,000-sq. ft. facility consisting of a full-service wine bar, a restaurant, a state-of-the-art wine storage facility and a discount warehouse. This is my fourth year teaching at COC’s ICUE. I live in Stevenson Ranch with my wife Cathleen and have 4 children, ages 24 to 20.
Course Description
This course focuses on food safety and sanitation in the restaurant. You will learn the extreme importance and practices necessary to maintain a proper safe and sanitary restaurant. You will be applying techniques and skills necessary to set up and manage all aspects and food safety and sanitation in the restaurant. We’ll also cover the importance of personal appearance, hygiene, establishing systems, routines and effective communication practices.
What to Expect in this Course
This course is online, in combination with synchronous lectures on Tuesday and Thursday evenings during our posted class times. The course will be conducted in Canvas and everything you need for your success will be found there. Once the course starts you will be able to login at cv.canyons.edu. Follow the login instructions at the bottom of the screen to log in. Here, you can also access Canvas user guides with helpful tips for navigating and using Canvas. For any Canvas related issues please call the Canvas Student Support line at (661) 362-3344 during college business hours, or (877) 889-9052 for 24/7 support. This is a fully online class and there will be no campus visits.
Types of Assessments
This online course will be much like a face-to-face course and will require participation with your camera on. In addition to the weekly class lectures conducted on ZOOM, I suggest allocating approximately 10 hours per week to complete various reading assignments and quizzes. Sometimes you will be working in groups and other times individually. You will have weekly assignments, online discussion groups, online lectures, quizzes and tests. You are responsible for the material and will be tested on your understanding of them. This course is designed to include collaborative learning. It is impossible to participate in a discussion or group project after the fact. Please do not wait until the last minute to complete your work. The unit module is available at the beginning of the week and you should start immediately. Education code requires faculty to drop no-show students. In this online class we don’t meet therefore failure to participate in the online classroom in the first weeks will result in your being dropped from the course.
Textbook Information
The book that we will be using for this course is: SERVSAFE Manager – 7th Edition. You only need the text and not the version that comes with a voucher.

Other Relevant Course Information
You will need to have regular access to a reliable computer with stable, high-speed internet connection. This can be either a personal computer, a computer in the COC library, a computer at or in TLC, or a public library computer.
Download the Canvas App for your smartphone! (Canvas by Instructure) o You need the following software on the computer: o Internet browser (Chrome works best with Canvas)
- Microsoft Word. You can download the Microsoft Office Suite for FREE as part of your school My Canyons account (my.canyons.edu)
- Adobe Acrobat Reader. You need to be able to open, print, and save PDF files. To view PDF files, you should have a current version of the free Adobe Acrobat Reader installed on your computer.

The Counseling Department offers appointments online. You can schedule an appointment by visiting the Online Counseling website. Counselors can help you map out a plan to reach your educational goals as well as advise you on course selection and registration.
Management of Stress and Mental Health
Often the pressure on our students is very strong, involving academic commitments, relationships, outside jobs and family pressure to name a few. The staff and faculty of College of the Canyons are here to see you succeed academically and care about your emotional and physical health. You can learn more about the broad range of confidential student services, including counseling and mental health services available on campus by visiting the Student Health & Wellness Center in the Student Services Building (across from the bookstore). The phone number is 661-362-3259 that you can call 24/7. You can also e mail for an appointment at StudentHealthCenter@canyons.edu. At the Canyon Country Campus the Health Center will be in the new Student Services Building.
Also, the National Suicide & Crisis Lifeline number is now 988. All students at COC are encouraged to enter that phone number in their cells. You can call it when you, or someone you know, is having thoughts of suicide or is in severe distress.
You can also now use the Crisis Text Line: Just text "Courage" to 741741. Someone will get back to you immediately. Its free, 24/7, and confidential.
Veterans Resource Center
The College of the Canyons Veterans Resource Center is a department within the Student Services Division at the college, created to help veterans and veteran dependents with applying to College of the Canyons, enrolling in classes, and requesting VA Education or Vocational Benefits.
