Hi, my name is Cindy Schwanke and I will be your Chef instructor for this class.
A brief introduction: I have been teaching at ICUE for 14 years. I have a degree in Food Service Management with a special emphasis in Baking and Pastry. I have over 30 years' experience in the hospitality industry form catering to restaurants to retail to hotels. I am excited to share my passion of the chocolate world with you. I try and stay on top of industry trends and bringing you relevant, industry related products and techniques. This is one of my favorite classes to teach!
This class is all about chocolate. How to make chocolate, where it comes from , different brands and regions of chocolate.
We will make baked goods as well as confections from a variety of different chocolates.
What to Expect in this Course
This class will be in person. You will need to be familiar with Canvas as all quizzes and homework assignments will be done on Canvas.
This class takes patience and good sanitation skills to be successful. There will be quizzes every week and a practical and written final.
Expect to make lots of friends with your delicious creations.

The Art of the Chocolatier by Ewald Notter
This course can be accessed on the first day of class via Canvas at https://coc.instructure.com. Log into Canvas using your CanyonsID single sign-on:
