Introduction
Hello and Welcome!
I am Professor Dr. Jimenez, and I am excited to teach this class!
Here's a little about me: I received my Doctor of Healthcare Science from Pacific University Oregon. I have a Master's degree in public health with a concentration in health promotion and health education, two bachelor's degree in nutrition and dietetics & food science, I completed the didactic program in dietetics, I have two specialized certificates in lactation consultant and lactation educator counselor, and a ServSafe certification. I have been teaching at COC for over two years as a Health Science Adjunct. I was a clinical-degreed nutritionist and a health educator with Northeast Valley Health Corporation in the medical nutrition therapy and patient and community wellness department. My primary role at Northeast Valley Health Corporation was working with RDNs, providing and receiving nutrition referrals from providers, and screening pediatrics who were positive for food insecurity. Then I switched to being a health educator and teaching nutrition classes for adults and pediatrics in Spanish and English, as well as making food demos/taste tests, creating health education handouts, assisting with the mobile food pantry, and working with Food Rx for health grant where I assisted type 2 diabetic patients who screened positive for food insecurity.
My experience in the healthcare field has shown me the need for more nutrition-knowledgeable professionals. We also need more healthcare staff professionals in various health-allied fields.
I strongly advocate for active learning through discussions, activities, and high-level thinking. I firmly believe that teaching is the best way to learn, and I am always open to new methods. As a lifelong learner, I hope to instill a similar outlook in you. I want you to embrace challenges, cultivate a passion for learning, and understand that with hard work, critical thinking, and input from others, you can continue to grow in any area of your work, learning capabilities, and life.
Course Description
HLHSCI-101 introduces students to the roles of various members of the health care system, educational requirements, and issues affecting health care delivery. It also covers the admission requirements for all COC health science programs.
This course's goal is to guide students through thinking, writing, and effectively communicating about their educational goals and readiness to enter a health science program.
Course Learning Outcomes (CLOs)
Students will:
- Discuss the roles of various health care professionals in the current health care delivery system.
- Outline the educational background methods of credentialing and licensing requirements of healthcare professions on a state and national level.
- Identify legal and ethical issues affecting the practice of health care professionals.
- Define professionalism and the rights and responsibilities of being a health care professional.
- Discuss how diversity impacts patient care.
- Explain the importance of infection control practices in maintaining the safety of the health care professional, patients, and others.
- Explain why the ability to write clearly and correctly is an important skill for the health care professional.
- List and explain the purposes of medical documentation.
Student Learning Outcomes (SLOs)
Upon completion of HLHSCI 101, the student will be able to:
- Discuss the roles of various health care professionals in the current health care delivery system.
- Outline the educational background methods of credentialing and licensing requirements of healthcare professions on a state and national level.
- Identify legal and ethical issues affecting the practice of health professionals.
- Define professionalism and the rights and responsibilities of being a health care professional as well as the factors that affect success in a health science program.
What to Expect in this Course
ONLINE LIVE CLASSES Meeting Information:
- Please do not schedule work, appointments, etc..during your chosen class time as there will be no opportunities to "make up" missed live meetings.
- Attendance is MANDATORY. *It is expected that you are to attend all class meetings.
- Live ZOOM Meetings will be scheduled and held during class times as posted in the schedule of classes for the section you choose to enroll in.
- Live meetings will be for lectures; clarification/discussions of lecture materials; to review Study Guides and Assignments; and for administering quizzes/exams.
What is needed:
- Computer/laptop/tablet with a microphone and working webcam (a cell phone is not recommended as phones have limited chat availability and functions and taking quizzes/exams are difficult this way).
- Internet Access: Reliable (as much as the internet can be!) That being said, if your internet is not reliable, please consider that connectivity issues are not an excuse for not being able to attend and stay in live meetings. Please be prepared to do what you need to do and make every attempt to be "in class" for all meetings. *
- Canvas: You will have access to Power Point slides, Lectures, Assignments, Discussion boards, Supplemental Handouts as well as website links that are helpful and aid in classroom learning. Please check Canvas OFTEN.
- ZOOM:
- Required for ONLINE LIVE CLASSES: Needed to gain access to Live Meetings & recorded lectures. NOTE: ZOOM runs best in Chrome.
- Printer: You will need a printer to print out slides, assignments, & handouts. Please be sure to have adequate paper and ink/toner available.
- Scanner: Or something to use to scan, upload, and submit assignments into Canvas. (iPhone with Notes app or other apps (Camscanner, etc...)
- Folder/Notebook/Calculator Pens/Pencils/Highlighters (red, blue (light/dark), green, orange, purple, & yellow).
What to do before classes begins:
- All enrolled students, as well as those on the wait list: I will email you the Friday before classes start with a welcome and what to expect email. Please be sure you check your school email before the first day of classes to get the information needed.
- NOTE: Everyone must attend the first class meeting (ONLINE LIVE CLASSES) otherwise you will be dropped. No exceptions will be made.
- WAITLISTED/CRASH ADD STUDENTS: Please attend the first class meeting as there is very important information that is discussed that will contribute to your success in the class.
- NOTE: Everyone must complete the first class check in assignments otherwise you will be dropped. No exceptions will be made.
PLEASE NOTE: All students are responsible for all assignments/participation, even if you add after the first day of class. Allowed absences are minimal so if you are not added by the second class meeting, I will not be adding anyone else to the class. YOU MUST ATTEND THE FIRST CLASS MEETING OTHERWISE YOU WILL NOT BE ADDED LATE EVEN IF ROOM IS AVAILABLE (due to absence policy).
Types of Assessments
Assessments will include the following:
- Quizzes throughout the semester to assess understanding of the material covered.
- Participation, written chapter activities/concept checks, and in-class and online discussions.
- Group project with a short presentation.
- Portfolio research paper: research and explore all aspects of a potential career in health care.
- There may be other opportunities for additional extra credit throughout the course.

Often the pressure on our students is very strong, involving academic commitments, relationships, outside jobs and family pressure to name a few. The staff and faculty of College of the Canyons are here to see you succeed academically and care about your emotional and physical health. Also, the National Suicide & Crisis Lifeline number is now 988. All students at COC are encouraged to enter that phone number in their cells. You can call it when you, or someone you know, is having thoughts of suicide or is in severe distress.
You can also now use the Crisis Text Line: Just text "Courage" to 741741. Someone will get back to you immediately. Its free, 24/7, and confidential.
Veterans Resource Center
The College of the Canyons Veterans Resource Center is a department within the Student Services Division at the college, created to help veterans and veteran dependents with applying to College of the Canyons, enrolling in classes, and requesting VA Education or Vocational Benefits.
