My name is Jessica Schulman and I will be your instructor and guide your learning experience this term!   My mission is to help you to succeed in the course and apply your nutrition knowledge toward advancing your career and improving your overall health.  A little bit about me:  My background is in nutrition, fitness, and wellness.  I graduated from UCLA with a bachelor’s degree in psychology, and went on to achieve a master’s degree in public health nutrition, while completing my dietetic internship (registered dietitian/nutritionist) at the VA Medical Center, West Los Angeles.

I completed a PhD at the University of Florida, College of Health and Human Performance and completed a master's degree in clinical psychology and school counseling certificate.   I worked as a clinical dietitian at Cedars-Sinai Medical Center and led fitness classes at UCLA’s John Wooden Center.

I have written books on nutrition immunology and behavioral nutrition: (1) Nutrition in Sickness and in Health and (2) Relational Nutrition: The Psychology of Attachment and Food Behavior.

I practice what I preach in class.  I eat mindfully and am passionate about staying active.  In 2022, I competed in the Pan American Swim Championships (19 countries) representing the Valencia Paseo Club Masters Swim Team and brought home metals!   

I have over 8 years of teaching experience on-line and on-ground and excited to teach students about nutrition and fitness!

Course Description

This course introduces the study of food and nutrients throughout the life-span and their impact on quality of life and disease prevention.

Student Learning Outcomes: (1) Examine the different nutritional components of a diet and the relationship that each component plays in the role of health promotion and disease prevention throughout the human life cycle and (2) analyze current dietary issues and the challenges they present in relationship to health, disease prevention and quality of life.

Course Objectives: (1) Analyze nutritional behaviors and practices leading to improved health and well-being, (2) examine the different organ systems in relationship to their role in the digestion, absorption, utilization and storage of nutrition, (3) formulate an adequate diet plan utilizing the tools of dietary principles, standards and guidelines established by multiple health agencies, (4) compare and contrast carbohydrates, proteins and lipids in relationship to their functions, chemical structures, health concerns and food sources, (5) examine the roles that vitamins and minerals play in relation to the health and well being of individuals, (6) assess various weight control measures and treatment modalities as to their effectiveness in ensuring healthy weight and body composition standards, along with adequate nutritional intakes, (7) examine the benefits of regular physical activity and the role it plays in maintaining the health and well being of individuals, (8) examine the various types of eating disorders in regards to signs/symptoms, nutrition deficiencies, body damage, interventions, and treatment modalities, (9) develop strategies that well identify common food safety issues and ways to prevent food borne illness, (10) identify specific populations with nutritional concerns and effective ways to meet their particular needs, (11) examine and assess the role that food technology plays in relations to health and disease.

What to Expect in this Course

Students will be expected to attend Zoom meetings and complete: (1) weekly quizzes, (2) a midterm exam, (3) a final exam, and (4) regular assignments.  There will be one major project which is a personal dietary intake analysis.  Exams and assignments are posted early and accepted until the lockout date on Canvas.  This way, students can pace themselves.

Note:  A computer with Internet access is required.  Also, a nutrition analysis is required and this may only be conducted on a computer and not a mobile device.  Students are required to purchase the software, "Diet and Wellness Plus" at Cengage.com.

Students are advised that participation is required to pass this class. Failure to participate in online discussions, course activities, and/or regularly reviewing materials will result in a lower earned grade in the course.

Generally, students are only dropped at the beginning of the semester to make room for students attempting to add. Should a student stop participating in the class, it is his/her responsibility to officially withdraw through the Office of Admissions. Failure to do so may result in a grade of “F” or “FW”.

Often the pressure on our students is very strong, involving academic commitments, relationships, outside jobs and family pressure to name a few. The staff and faculty of College of the Canyons are here to see you succeed academically and care about your emotional and physical health. At the Canyon Country Campus the Health Center will be in the new Student Services Building.

Also, the National Suicide & Crisis Lifeline number is now 988. All students at COC are encouraged to enter that phone number in their cells. You can call it when you, or someone you know, is having thoughts of suicide or is in severe distress.

You can also now use the Crisis Text Line: Just text "Courage" to 741741. Someone will get back to you immediately. Its free, 24/7, and confidential.

Veterans Resource Center

The College of the Canyons Veterans Resource Center is a department within the Student Services Division at the college, created to help veterans and veteran dependents with applying to College of the Canyons, enrolling in classes, and requesting VA Education or Vocational Benefits.
