Let me start by telling you about me. I have a Bachelor’s in Political Science from
UC San Diego. My Associate of Culinary Arts was completed at the California Culinary Academy in San Francisco. After graduation I worked at various restaurants in Los Angeles, worked at Sur La Table organizing their culinary classes and as a private chef in San Francisco. I have been teaching for the last 18 years first at Le Corden Bleu and now at COC for the last 2 years. I have a daughter and son, Eleanore and Grant who just started 7th and 3rd grades.
Students will learn the basic fundamentals of knife skills, equipment knowledge, and will develop basic cooking techniques. Students will gain hands on experience during lab hours. This class emphasizes proper safety and sanitation practices
What to Expect in this Course
This course is completely online for the next 8 weeks which runs 2/8/21 to 3/23/21. The course will be conducted in Canvas and everything you need for your success will be found there. Once the course starts you will be able to login at cv.canyons.edu. Follow the login instructions at the bottom of the screen to log in. Here, you can also access Canvas user guides with helpful tips for navigating and using Canvas. For any Canvas related issues please call the Canvas Student Support line at (661) 362-3344 during college business hours, or (877) 889-9052 for 24/7 support. This is a fully online class and there will be campus visits only to pick up product for cooking production.
Success in this Course
This online course will be much like a face-to-face course, it takes a significant time commitment from you. I expect you to spend at least 10 hours per week working on the material in both a written and practical nature. There will be lectures conducted by zoom, Demos conducted via Zoom and prerecorded videos. Production will be conducted in your own kitchen with a written critique. It is for this reason; I say the course will take at least 10 hours per week. You will have weekly assignments, online lectures and quizzes and tests. You are responsible for the material and will be tested on your understanding of them. This course is designed to include collaborative learning. It is impossible to participate in a discussion or group project after the fact. Please do not wait until the last minute to complete your work. The unit module is available at the beginning of the week and you should start immediately. Education code requires faculty to drop no-show students. In this online class we don’t meet therefore failure to participate in the online classroom in the first week will result in your being dropped from the course.

Physical Kitchen Requirements
You will need access to a kitchen with a stove top burner and oven. You will also be issued a cooking kit which you will check out at the start of class and be responsible for returning at the end of class.
You will need to have regular access to a reliable computer with stable, high-speed internet connection. This can be either a personal computer, a computer in the COC library or in the TLC, or at a public library computer.

This course can be accessed on the first day of class via Canvas at https://coc.instructure.com. Log into Canvas using your CanyonsID single sign-on:
