Hello and Welcome!

I am Professor Dr. Jimenez, and I am excited to teach this class since it was the one that ignited my passion for nutrition back in 2006 at College of the Canyons.

Here's a little about me: I received my Doctor of Healthcare Science from Pacific University Oregon. I have a Master's degree in public health with a concentration in health promotion and health education, two bachelor's degree in nutrition and dietetics & food science, I completed the didactic program in dietetics, I have two specialized certificates in lactation consultant and lactation educator counselor, and a ServSafe certification. I have been teaching at COC for over two years as a Health Science Adjunct. I was a clinical-degreed nutritionist and a health educator with Northeast Valley Health Corporation in the medical nutrition therapy and patient and community wellness department. My primary role at Northeast Valley Health Corporation was working with RDNs, providing and receiving nutrition referrals from providers, and screening pediatrics who were positive for food insecurity. Then I switched to being a health educator and teaching nutrition classes for adults and pediatrics in Spanish and English, as well as making food demos/taste tests, creating health education handouts, assisting with the mobile food pantry, and working with Food Rx for health grant where I assisted type 2 diabetic patients who screened positive for food insecurity.

Working in the healthcare field has made me realize that we need more healthcare professionals knowledgeable in nutrition. For this class, it is a basic introduction to nutrition, and I hope you find this class enjoyable and rewarding!

Course Description

This class introduces the study of food & nutrients throughout the lifespan as well as their impact on the quality of life & disease prevention.

By the end of this course, students will be able to:

  1. Examine different nutritional components of a diet and the relationship each component plays in the role of health promotion and disease prevention throughout the human life cycle.

Course Objectives:

  1. The student will be able to apply concepts of nutrients to the issues, challenges, and concerns that affect nutritional and dietary choices daily throughout the life cycle to improve health and prevent nutrition related health concerns.
  2. The student will be able to critically analyze foods and interpret the physiologic and chemical effect of nutrients on the body as well as determine if consumption will be a benefit or a detriment to health.
  3. The student will be able to make better nutritional choices as a result of increased awareness by incorporating a variety of foods into the diet that will increase quality of life throughout the lifespan and which are necessary to achieve the goal of health and normal body function.
  4. The student will be able to analyze diet trends and issues and establish whether health is being promoted, quality of life is increased, and disease is being prevented thorough the varying stages of life.

What to Expect in this Course

OnlineLIVE CLASSES Meeting Information:

  • Please do not schedule work, appointments, etc..during your chosen class time as there will be no opportunities to "make up" missed live meetings.
  • Attendance is MANDATORY. *It is expected that you are to attend all class meetings.
  • Live ZOOM Meetings will be scheduled and held during class times as posted in the schedule of classes for the section you choose to enroll in.
  • Live meetings will be for lectures; clarification/discussions of lecture materials; to review Study Guides and Assignments; and for administering quizzes/exams.

All lectures for 100% Online:

  • will be recorded are to be watched/viewed on your own time.
  • will be broken down into parts for easier viewing.
  • will range anywhere from 20-50 minutes long depending on the subject matter.
  • will be in depth and more detailed than recorded lectures that are available for the in person and online live classes since we do NOT have a formal class meeting time. 

All lectures for onlineLIVE classes:

  • Connect to AND attend all live meetings as scheduled during the class time/section you have chosen (Online Live is NOT a 100% online class that you can do everything on your own time and expect to pass, nor is it work-at-your-own pace type of course).

What is needed:

  • Computer/laptop/tablet (Please note that using a smart phone has limitations in Canvas and the settings may look different)
  • Internet Access: Reliable (as much as the internet can be!)
  • Canvas: You will have access to Power Point slides, Lectures, Assignments, Discussion boards, Supplemental Handouts as well as website links that are helpful and aid in classroom learning. Please check Canvas OFTEN.
  • ZOOM:
    • 100% online classes: ONLY to be used for office hours and one on one appointments (scheduled as needed).
    • Required for onlineLIVE classes: needed to gain access to Live Meetings. NOTE: ZOOM runs best in Chrome.
  • Printer: You will need a printer to print out slides, assignments, & handouts. Please be sure to have adequate paper and ink/toner available.
  • Scanner: Or something to use to scan, upload, and submit assignments into Canvas. (iPhone with Notes app or other apps (Camscanner, etc...)
  • Folder/Notebook/Calculator; Pens/Pencils/Highlighters (red, blue (light/dark), green, orange, purple, & yellow).

Other general things you should know and do before the semester starts:

To be ready, I expect you to check your email, messages, announcements, and Canvas often and READ everything that is available to you. I will not "sugarcoat" it: this class can be hard. There is a lot of information that you need to keep up with. It will be very hard for you to do well as a student if you like to put things off and don't make learning a goal at this time. Without making time to learn, you will fall behind very quickly. Your commitment to dedicating sufficient time and effort to learning is crucial for your success in this class, so please think about how much time you will need to dedicate to this class if you decide to go ahead with it.

I want my students to learn the skills they need to make better decisions about what they eat and drink in my class. We decide what and how much to eat several times a day. You have been doing this up to this point and will keep doing it until you cannot. Also, if you are going into a healthcare allied profession, knowing the basics of nutrition will be helpful when working with patients or clients. Patients often turn to medical assistants, nurses, or physicians for advice; therefore, this class will give you the skill to teach and guide your patients or clients. Ultimately, what you get from this class depends on what you put into it! This is not just a class you must take to meet a GE requirement or get into a school. Nutrition will always be an essential part of your life and for patients and clients!

**PLEASE NOTE** All students are responsible for turning in ALL of their work on time, even if you add after the first day of class. It will be hard to remember everything at once if you stay caught up in class. All of your tasks, discussions, and participation will have clear due dates. If you don't check in regularly or don't turn in your work for two weeks in a row, you might be kicked out of the class unless there is email communication suggesting a problem. Communication is Mandatory.

    • Discussion Board on Nutrition topics
    • Research Paper
    • Food Diary Research Discussion Board
  • Participation (weekly activities and discussion boards in Canvas)
    • Quizzes/Exams: All quizzes and exams have time limits and must be taken no later than the due date stated on the schedule. No make-up will be allowed.
  • Extra Credit Assignments will be available.
  • The syllabus in Canvas will provide further information about point value and the breakdown of points for all class assignments.

NOTE: All assignments will need to be submitted in either doc, docx, or PDF (preferred) format. Please be sure you know HOW to do this BEFORE assignments are to be submitted in Canvas. All assignments must be submitted via Canvas ON TIME (it is strongly recommended that you submit any assignment or discussion reply before the last minute. No late work will be accepted, so please plan accordingly. "Technical difficulties" will not be an excuse for not getting assignments submitted on time.)

It's essential that you check your email and Canvas regularly to stay updated with all the important messages. If this is not feasible for you, it might be worth considering a different class format or time. This class is offered in various formats, including OnlineLIVE, in person, during a full 16-week term, with shortened winter and summer sessions and late-start 8-week sections.

I strongly advise that you practice logging into Canvas before class starts so that any issues can be fixed before the first meeting of the class. This is especially important if you have never taken a class that uses technology to teach before.

Often the pressure on our students is very strong, involving academic commitments, relationships, outside jobs and family pressure to name a few. The staff and faculty of College of the Canyons are here to see you succeed academically and care about your emotional and physical health. Also, the National Suicide & Crisis Lifeline number is now 988. All students at COC are encouraged to enter that phone number in their cells. You can call it when you, or someone you know, is having thoughts of suicide or is in severe distress.

You can also now use the Crisis Text Line: Just text "Courage" to 741741. Someone will get back to you immediately. Its free, 24/7, and confidential.

Veterans Resource Center
